While on my trip, we stopped into an amazing spot in Knoxville: @antiques_wcg…the epitome of “if you know you know” hidden in a warehouse and completely unmarked…but absolutely filled with European antiques! A new favorite! 

Also was fortunate enough to visit @enebyhome’s Nashville warehouse with some girlfriends! It did not disappoint - it’s a must see when in round top!

And found some pretty new crystal finds hunting with @alexisnegranti in Columbia, TN at @columbiaantiquemarketplace! Will be hitting the shop very soon!
It all started with an extra bag of spinach and a It all started with an extra bag of spinach and a potluck party… I set out to make the best spinach salad with fresh strawberries and elderberry balsamic homemade dressing. I think this turned out exceptional and I’m excited to share the recipe with you! Full details and helpful steps on my blog, boxwoodavenue.com!

CANDIED PECANS
½ Cup Pecans - Roughly Chopped
Dash of Cinnamon
Pinch of Sea Salt
2 Tablespoons Pure Maple Syrup

SALAD DRESSING
6 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Pure Maple Syrup
1 Tablespoon Apple Cider Vinegar
2 Tablespoons Balsamic Vinegar
2 Shallots, Thinly Sliced
Dash of Cinnamon, to taste
Pinch of Salt and Pepper, to taste

SALAD
5 oz. Baby Spinach
1 Pound Strawberries - Rinsed, Stemmed, and Sliced
Shaved Cheddar Goat Cheese

INSTRUCTIONS
Prepare the spinach salad dressing: Add olive oil, maple syrup, apple cider vinegar, balsamic vinegar, cinnamon, thinly sliced shallots, and a pinch of salt and pepper to a sealable jar. Give it a good shake to thoroughly combine.

Prepare the candied pecans: Roughly chop the pecans and place into a medium sized frying pan. Drizzle with 2 tablespoons maple syrup, a pinch of salt, and a dish of cinnamon. Sauté over medium heat until just toasted. About 5 minutes. Remove from heat and set aside.

Prepare the salad: De-stem and cut clean strawberries into ⅛" slices. Place clean spinach in a large salad bowl. Add strawberries, candied pecans, and top with freshly shaved goat cheddar cheese.

Shake the dressing once more to recombine in case of separation. Pour dressing over the salad and toss to combine.
When I turned 30 I had this thought of: who am I? When I turned 30 I had this thought of: who am I? What is my purpose? Have you ever struggled with this? 

I began therapy, reading self development books, and asking myself questions I’d never considered asking before. 

I started following and listening to podcasts that teach self-love and selflessness at the same time. Slowly peeling back the layers of my self and looking inward. 

I am so grateful for the lessons learned in 2022 and the time I carved out for diving deeper. I started meditating, a yoga and pilates practice, journaling, reading more, doing my best to becoming a better friend, and really learning how to accept myself as I am with all of my imperfections.

As we go into this year, I plan on sharing a bit more about this - like the podcasts and books that I’ve loved - and I share this vulnerably here to show up a bit more authentically because it has become an important part of my life. 

As I look into 2023, I have a lot of intentions and I am truly grateful for each and every moment. This list is meant for fun, but also a bit serious too - kinda like me! 😆💗 What are some of your ins and outs for this year!?
