- 8 eggs
- salt and pepper to taste
- 1/2 cup cream or dairy of choice
- 1 cup cheese of choice
- 1 cup vegetables of choice
- 1/2 cup meat of choice
Preheat oven to 375 F.
In a large bowl whisk 8 eggs, add 1/2 cup cream (or milk) and a pinch of salt and pepper.
In a 10" oven-proof skillet, heat 1 tablespoon olive oil over medium high heat and sauté meat and any other veggies that take longer to cook such as onions, carrots, broccoli, bell peppers until cooked al dente. Drain any excess fat.
Add softer veggies and any other herbs or spices such as zucchini, tomatoes, mushrooms, and garlic. Sauté over medium heat until al dente, 3-4 minutes.
Remove the skillet from heat.
Pour the eggs directly into the skillet, then stir in the cheese, and add any additional toppings desired such as herbs or additional vegetables.
Bake for 15-20 minutes, or until *just* golden on top and cooked through.
Eggwhites or beaters may be substituted for eggs if desired. Follow the instructions on the packaging for conversions.
If diary allergies are a concern, a dairy alternative may be used.
Any type of cheese, meat, or vegetable combination can be used! Common meat options are bacon, ham, or sausage. Common cheese options are swiss, cheddar, feta, parmesan, or gruyere. Vegetables such as onion, mushroom, zuchinni, tomatoes, potatoes, or broccoli are great! Get creative with it.
