I'm a champs girl through and through (shout out to Heather Dubrow). Whenever I have the chance to celebrate with a glass of champagne, I take it (even if it's just celebrating another Monday on the books), so naturally, when I had some strawberries that looked past their prime, but not quite bad enough to throw away, I decided they needed to go into my champagne A.S.A.P.! Then, I realized I had some thyme on hand, and remembered seeing this recipe, over on our friend's Quirks + Twists. All of these events added up to one delicious cocktail, that will have you dreaming of summertime and farm-to-table nights.
Strawberry-Thyme Champagne Cocktail
- 1 bottle of champagne (I prefer extra brut)
- a handful of strawberries
- 5-10 sprigs of fresh thyme
- 1.5 oz. saint germain
- 1.5 oz thyme infused simple syrup
Begin making thyme infused simple syrup by dissolving 1 part sugar into 1 part water on your stovetop (I did 1 cup ratios, but had a lot left over for later). Once the sugar is dissolved, add in the thyme, and allow to just barely simmer for at least 10 minutes. The longer you let the thyme simmer, the more infused the simple syrup will be! Allow this to cool before mixing with other ingredients.
In a cocktail shaker, muddle 3-4 strawberries, then add the saint germain and simple syrup, shake well over ice and pour into a chilled glass.
Top with champagne, garnish, and enjoy! Serves 4-5 (or 1), depending on your serving sizes.
