What is Lemon Posset?

Lemon posset is a velvety, citrus-flavored dessert that dates back to medieval times.

Originally a hot drink made with milk curdled by wine or ale, it evolved into a rich, creamy pudding set with lemon juice.

The acidity of the lemon thickens the cream, resulting in a silky and smooth texture that melts in your mouth.

Not only is this one of the most aesthetically pleasing desserts to make (especially if you use the lemon as the serving dish!), it is truly SO easy.

Yes, the chill time might be a little longer, but if you have a dinner party, making these the night before would be a perfect night time ritual!

If you have birthdays, bridal showers or baby showers coming up, this is the best lemon posset recipe you will find. The simple ingredients only call for lemons, sugar, and cream!

Baker’s Tip: Using high quality cream and lemons will be crucial to this recipe! With only three main ingredients, ensuring they are high quality will elevate your dessert. 

Variation Options

I love this recipe because you can adjust the flavors according to your preference. Not a lemon fan? Try using blood orange or grapefruit! The tanginess of the citrus juice paired with the cream is what really makes this dessert amazing.

Other citrus varieties that would be great would be orange and lime – so refreshing! Can’t you just picture a beach day followed by orange posset? The perfect ending to a perfect day! But if we’re being honest, I have been dreaming of infusing the cream with lavender in addition to the lemon! Try it and let us know how it goes?

Lemon Posset Ingredients

2 cups Heavy Cream

3/4 cup Granulated White Sugar

2 Ripe Lemons (regular is best, but meyer lemons would be delicious, too!)

Lemon Zest 


Directions

  1. Combine 2 cups cream and sugar in a small saucepan. Stir together and bring to a gentle boil, then cook for 2 to 3 minutes over medium heat. Stir in lemon juice.
  2. Hollow out the pulp of the lemon to use as the serving dish for the final dessert. If you can find lemons with leaves, it will make the presentation even cuter!
  3. Pour cream mixture into lemon cups or small ramekins and refrigerate until set, about 5 hours. But, after a couple of hours, you should see the mixture start to set. 
  4. Put on the finishing touches – like fresh mint or lavender, and serve. I like to add extra lemon zest on top, too!

Lemon posset is a velvety, citrus-flavored dessert perfect for summer! You won't believe how easy it is to make this beautiful dessert with just three ingredients!

Serves — 8

Ingredients  

Lemon Posset

  • 2 cups Heavy Cream
  • ¾ cup Granulated White Sugar
  • 2 Juice of Ripe Lemons
  • Lemon Zest
  • 4 Lemons, Halved and Hulled

Instructions 

  • Hollow out the pulp of the 4 extra lemons to use as the serving dish for the final dessert. Alternatively, you may opt to use ramekins. Serving Tip: If you can find lemons with leaves, it will make the presentation even cuter! Set aside.
  • Combine 2 cups cream and sugar in a small saucepan. Stir together and bring to a gentle boil, cook for 2 to 3 minutes over medium heat.
  • Stir in lemon juice.
  • Pour the lemon cream mixture into hulled lemon cups or small ramekins and refrigerate until set, about 5 hours. Note: After a couple of hours, you should see the mixture start to set.
  • Put on the finishing touches – like fresh mint or lavender, and serve. I like to add extra lemon zest on top, too! Enjoy!

Notes

Note: Don’t wan’t to use so much sugar? You can adjust the amount of sugar to your liking or even add in whole vanilla bean for extra flavor.
