Paradise in a Glass: Guava Pineapple & Coconut Cocktail
Earlier this week I found a pineapple at the store. It was green, but I bought it anyways. I like to live life on the edge like that. I usually come up with recipes while I'm at the grocery store - our grocer doesn't carry much, usually just what's in season, so it keeps me ho
An organized person might have some sort of calendar noting what's in season, what holiday's are coming up, and what they're going to share throughout the month. I tried that, and it sucked. I can't stick to a schedule, and I am not an organized person. This is why I can't have a real job.
Anyways, I envisioned myself making lots of things with this pineapple as a way to pretend I was in paradise. Pineapples = Hawaii. Hawaii = Paradise.
Just me, the goats, the chickens, and the dog, out back, pretending we are in Hawaii. The goats were wearing lei's and the hens were wearing bikinis in my vision.
So I made this little number of a cocktail to really add to the drama of my vision. When I took the first sip, I looked down at my goats and said, "Oh, that's good." They
It was Hawaii in my mouth. I have to say, it's my favorite cocktail so far, which is like picking a favorite child, but I tell you what, this Hawaii mouth party is G-O-O-D, good.

Guava Pineapple & Coconut Cocktail
- 3 oz. Guava Juice
- 3 oz. Coconut LaCroix
- 3 oz. Coconut Vodka
- 1/2 cup diced pineapple (not green, see above)
- Juice from 2 limes
- Crushed Ice (I used my blender - it was worth lugging it out of its home)
Step 1: Turn on your vacation playlist (setting the mood here), then add vodka, lime, and pineapple into a shaker; muddle it until you can't muddle no more.
Step 2: Add guava juice to the muddled mixture, and shake well over ice.
Step 3: Pour into two glasses, add 1.5 oz. of coconut LaCroix to each glass, and top with crushed ice. Finish things off with a slice of lime and chunk of juicy pineapple.
Step 4: Take a sip, close your eyes, and pretend you're on a beach...sippin somthin' strong.
